Let's Catch Up....

A few weekends ago Joe and I ventured out on a day date. We hung out on the patio of Cafe Ole for tacos and margaritas. The day was beautiful so we decided to go to the Memphis Zoo. We are members now...yay!!
This was Joe's first time to see the new Teton Trek. It is really neat with wolves and cute bears :) Did you know the Memphis Zoo was voted the #1 zoo in the USA??!! I am so happy that we can go there anytime we want now.
This tired guy was taking a nap in cat country. He was literally hanging on this limb....funny!
On Sunday we went to 17....yes you read that right, 17 open houses. These 2 were my favorites, but I still didn't feel that spark like "this is MY house"....oh well!!

Scheduling Sunday/Menu Monday

We had a blast in Disney World this past weekend, but more on that later.

Sunday: Shrimp Creole with rice and tossed salad
Monday: Cardio???? I have a parent meeting in the P.M., leftovers!!!
Tuesday: Kickboxing in the P.M.- Meatloaf, mac-n-cheese, green bean bundles
Wednesday: Cardio in the P.M. and a massage after...yay!! - leftovers
Thursday: kickboxing in the P.M.- Chicken, pepper, onion, and pineapple kabobs with yellow rice
Friday: pick up dinner- baking like a crazy mad woman...big wedding on Saturday!!
Saturday: Wedding day....baking again....eating at the wedding

Salsa Time!!


I found a new salsa recipe that I love. I normally make more chunky salsa, almost pico de gallo, but this one is more like they serve at Mexican restaurants. Please try it and enjoy...OLE!!


1 large can of whole tomatoes, undrained
1 regular-sized can Ro-Tel mild tomatoes with green chilies
1/3 cup chopped onion
1 and a half or 2 chopped jalapenos (I leave seeds and membranes in at least one, depending on how spicy they are)
2 cloves of garlic (3 when I'm feeling extra zingy)
juice of one lime
1/4 tsp. salt
1/4 tsp. sugar
less than 1/4 tsp. cumin (I eyeball it at roughly 3/4 of the 1/4 tsp.)
1.5 cups loosley packed fresh cilantro leaves (this is not optional!)

Pulse in a food processor until it is at the desired consistency. I like mine pretty well-blended with no huge chunks.The first time I made this, I was not initially impressed. Then, 3 or 4 hours later, I pulled it back out and it changed my life. Mix and mingle, baby. It does you a world of good.

Two-A-Day's??

Joe will be getting up very early when we get back from Mickey Land....4:45 am to be exact...yuck! But on the flip side, he will be home for dinner every night. Although I can see changes in my body due to my healthy eating and working out 4-5 days a week, I wonder if since I will be up super early anyways..... Should I go to the gym in the A.M. too and also at night? I was thinking about doing the treadmill/elliptical in the morning for about 45 minutes and then doing my kickboxing class or doing strength training in the evenings. Do you think this is too much? Will I wear my body out or see more change?? I would love any feedback :)


Scheduling Sunday/Menu Monday

I am so excited. Joe is HOME!! One of the things I am most excited about is planning our dinners....I know, I am a dork! Joe is going to join my gym, so we will also be working out together. Today we are off house hunting, but here is the plan for the week.

Sunday: Pork Chops with Garlicky Broccoli from Real Simple
Monday: Chicken Tacos with Mango Avocado Salsa from Cooking Light -cardio in the P.M.
Tuesday: Fried Chicken Salads using Chick-fil-a strips -kickboxing class
Wednesday: Leftovers...packing for Disney!! -cardio in the P.M.
Thursday: We leave for Disney, hopefully dinner with my Aunt and Uncle in Orlando
Friday: Magic Kingdom-dinner reservations at Kona Cafe
Saturday: Blizzard Beach-dinner reservations at Wolfgang Puck's in Downtown Disney
Sunday: Coming home from Disney...boo!
