Scheduling Sunday/Menu Monday

Monday: First Day back at school! Lindsey is coming over to watch The Bachelor Pad. Spencer's Sloppy Joes's, Baked "chips".....I know, I was supposed to make this last week....but it never happened. I froze the meat though, so don't worry! I will make this on Sunday night so that on Monday all I have to do is heat it up for Joe. I do not eat sloppy Joe's....so I will be eating the chips and a salad.

Tuesday: Tonight I have a special JL thing I am going to. I will be helping a child buy school clothes and supplies at Target...helping kids and shopping at Target...umm, yes please!! When I get home, Joe and I are going to have a date night and go get snow cones. I guess we will pick something up for dinner too....maybe? If not there are leftovers.

Wednesday: Lemon Chicken with Olives, orzo, and salad...another dish I was supposed to make last week...shush!! I was BUSY!!

Thursday: Oven fried pork chops with roasted green beans and pecans

Friday: Joe is working....I'm on my own and have LOTS of cupcakes to make!

Saturday: ??? Maybe we will grab some thing before Joe goes to work

Sunday: Cilantro lime chicken with avocado salsa



A New ME!

Tomorrow is the start of a new school year for me and all my kiddos....a new beginning if you will. I have decided that tomorrow will also be the start of a new journey for me....a weight loss journey. I go through stages where I am all gung-ho about something and then it fades away. Not this time! We are going on a cruise in October and I want to be rockin' that bikini. We will also be starting to try and have munchkins in the next year and I want to be in the best shape that I can be before I add a bunch of baby weight. I have always heard that if you have a goal, you should write it down and then write down the ways that you will get to said goal. So here goes...my plan for success. Let me know if you have any tips of hints to make this process easier.

1. Get 8 hours of sleep every night. I have to wake up at 6 am...so that mean I need to be in the bed with the lights off at 10 pm...yikes!!

2. Work out 5 days a week. I am literally scheduling stuff around my workouts. If I know that I cannot make it to the gym in the evenings. I need to get my butt up to the gym in the morning...yuck!!

3. Eat more protein. I think I am a pretty healthy eater. I am going to eat more protein at lunch. Here is a sample menu for the day:

**Breakfast- 1 cup of mixed berries and 3/4 cup of dried cereal....eaten in the car on the way to work.

**Lunch- 1.5 cups of tossed salad or spinach salad with light dressing, 1 chicken breast (baked or grilled), steamed broccoli with lemon pepper, fruit

**Afternoon snack- granola bar or veggies with hummus

**Dinner- shrimp stir fry with brown rice

**After dinner treat- Eddy's all natural fruit bar


So what do you think?? Pretty healthy??

Flashback Friday

Gahhhh!! It has been a L-O-N-G time since I did a Flashback Friday.
Last week I got all fancy with the scanner and scanned in bunch bunch of old and slightly embarrassing pictures from college...enjoy!Me and Kristy in our bridesmaids dresses at Beth and Bills wedding.
Going to the clubs on Halloween....trying to be a sexy cat and a sexy witch....
I have no idea what this is all about....but it's in our dorm in Copper Hall.

Finger Lickin', Lip Smakin' Yummy Chicken Goodness!

When ANYONE new comes into town, we have to bring them to Gus's....it's just what you do. Well, Joe's friend from his Great Lakes days, Kurtis came for a visit this week and said he wanted some good cookin'. So you KNOW he was getting some Gus's whether he liked it or not. We amde sure to tell him that he would not look like this after eating all the fried food...I know, it's mean, but there are too many people in Memphis that look like this...we are one of the fattest cities in America!
We also invited Tyler and Katelyn along....can you believe that they had never eaten at Gus's either!!

The Food!! We ordered fried pickles for the table and then Joe and I both got chicken breasts and split some fries...their fries are so so GOOD!!

After dinner we went to Beale Street and guess who we saw? Aubrey from "Police Women of Memphis". Seriously, if you haven't seen this show on TLC, you have to watch it. We love watching all the crazy crime captured on tape....from our city...lovely!!




Ole!!

Los Compadres is pretty much our "go-to" Mexican restaurant. It's cheap, yummy and you can walk there from our house....or walk home from there...depending on how many margaritas you have consumed ;)
We went a few weeks ago with Lindsey and Nick and had a super awesome thumbs up kind of time !
